Joe should open his own Kung Fu themed bar. A bar designed to host Kung Fu fights just like in the movies. Security guards double as referees, and I guess you would need some medical staff. Lots of his MMA friends would hang out there. Normal guys could have a chance to scuffle with MMA pros. Sign a waiver when entering the bar. Cameras live streaming the fights. Maybe a special room with padded walls and floor. Cheap wooden tables and chairs, that are meant to be broken and replaced daily.
